Simon opened his first restaurant, Greens, in 1990, with two cookery books, no idea how to cook, but look at him now.
Within two years Greens has been described as one of the most exciting restaurants in the UK, even though it was vegetarian. His restaurants have gone from strength to strength, since setting up EARLE in 2006 with wife Ali and friends, footballer Jason McAteer and footy agent Dave Lockwood. They have recently been joined by a second footballer, Jason Koumas.
